Water treatment was added to only the 3.5 gallons of Mash Water. All water was bottled spring water. My initial mash temperature was too high (158). Cool water was added, but brought the mash to 147. I did not have space in the mash tun to add more hot water, so I stayed at 147 and mashed for a longer period of time. The special ingredients were added at different times. Orange peel and Coriander were added with the Saaz addition (25 min boil). Grains of Paradise and a dash of black pepper were added with the final aroma hops and irish moss (5min boil). The Ginger puree was mixed with a small amount of vodka to make the addition more sanitary when added to the fermenter. Jason Blake of Eden Prairie assisted.

This Recipe was developed with David Goplen. 1 oz mix of 50/50 sencha and Jasmine tea while the temperature is rising after steeping the grains, from 150 to 195˚ - this was 10 minutes for me. Also brew one gallon of strong tea, using 1 oz Jasmine, .6 oz lavender, and .3 oz heather. Brew the tea with the water holding below the boiling point for 10 min. Remove the tea and boil briefly. Mix boiled tea into the chilled wart, and pitch the yeast. Then dry-hop with .5 oz of Jazmine tea 12 hours into fermentation. I believe that there was some luck contamination by the tea, that gives this beer a pleasant sour flavor.

Actually the Irish drink this stuff on ice. This is a bit sweet of medium and a Haralson blend with a fair proportion of Red Delicious to remove some pucker-factor and aide in the wholesale gulping of this lovely cider on a hot day or with good or even bad food. Sparking carbonation helps over ice too. Used Star Cote du Blanc on fresh pressed local apples without pasteurization. No sugar, no filtration, backsweetened a bit with juice and stabilized with potassium sorbate when ABV/sweetness was achieved. Fined with SuperClear and mellowed under a light CO2 head then carbonation was forced to level at bottling time.
