The Upper Mississippi Mash-Out Banquet
Catered by Chef Manfred Krug and Chef Jerry Pelton, Chefs/Culinary Instructors at the St. Paul College.
Date: January 26, 2008, 6pm (1.5 hours before awards ceremony)
Cost: $30 per person (including commemorative Mash-Out glass!)
Location: The Klub Haus
NOTE: Award Ceremony seating will begin at 7:30pm. Only ticketed Beer Dinner members will be allowed into The Klub Haus before then.
Chefs Manfred Krug and Jerry Pelton, both instructors at the St.Paul Vocational Technical Institute's Culinary program, have agreed to cater a Beer Dinner for the Upper Mississippi Mash-Out before the Awards Ceremony on Saturday night!

Beer Dinner Menu:
Appetizer/Salad Table
- Green Bean and Neu Potato Salad with Bacon and Red Wine Vinaigrette Dressing
- Pickled Herring with Apples, onions, Sour Cream Dressing
- Marinated Beet Salad
- Sweet and Sour Cucumbers with Chives
Main Courses
- North Sea Fish Stew: A Rich Broth consisting of Leeks, Tomatoes, Celery and chunks of Cod, Shrimp, Scallops, Clams, and Whole Mussels finished with Saffron and just a splash of Heavy Cream to Richen it a bit.
- Beer Braised Flemish Beef Stew with Onions and Mushrooms: Rich Stew Cut Chuck Roast of Beef braised with Belgium Ale, Caramelized onions and Mushrooms
- Chef Carved Mustard Glazed Loin of Pork with Turnips: Mustard and Herb rubbed Pork Loin slow roasted, than a nice pan jus (gravy) from the drippings served with glazed turnips
- Braised Red Cabbage: Traditional Sweet Sour Red Cabbage with Red Wine, Vinegar, Bacon, Apples, and Current Jelly
- Celery Root and Potato Puree: Perfect for putting the Beef Stew Over as well as a nice compliment to the Pork Roast
- Brussel Sprouts Gratine Baked in a Cheesy Cream Sauce
Assorted Breads and/or Dinner Rolls
Desserts
- Spiced Brown Beer Cake with Dried Fruits and Nuts
- Golden Rice Custard: (Like a warm Rice Pudding)
- Belgium Chocolate Torte with Vanilla Sauce

Your dinner will be complemented by a Belgian Strong Golden Ale, brewed by Kris England, brewer of last year's Best Of Show beer, and several other beers provided by some of Minnesota's finest homebrewers.
